Mini Caramel Apples

Happy Friday, friends! This is my last day of Halloween Treats Week and I’m a little sad this week has come to an end! It’s been a little challenging finding the time to blog everyday, but it’s been so fun! Especially reading all of your comments! All of you are so nice!

Of course I couldn’t choose just any regular recipe for my last Halloween Treat! My friend, Machel, gave me this idea that I just had to make! These Mini Caramel Apples are simply just regular sized apples cut in half and cored and then scooped out with a melon baller! How smart is that? Mini kid-sized apples! Then, you just melt your caramels and gather a few toppings and voila! A delicious and fun dessert or snack for the whole family! And maybe even a little healthy! (At least there is some nutrition under all that caramel….)

The toppings are optional, but I thought they added a great touch! I used shredded coconut, chopped nuts, and crumbled Halloween Oreos (left over from THIS post). My daughter certainly got messy with this one and didn’t want to eat the apple center, but Gordon and I just loved these! I mean, who doesn’t love a good caramel apple? We had a blast and I have a feeling that you will too!

Mini Caramel Apples– (not much of a recipe today!)
yield: 4

Ingredients:
4 apples, washed (any variety)
1 small package caramels, unwrapped
1/2 cup water (optional)
1 tablespoon lemon juice (optional)
various toppings: chopped nuts, chopped halloween candy, coconut, graham cracker crumbs, cookie crumbs, etc.

Directions:
In a small bowl, mix water and lemon juice together and set aside.
Cut apples in half and scoop out seeds. Using a melon baller, scoop out round ‘mini apples’. Coat mini apples in water and lemon juice mixture. (This step is optional–if you are making these in advance, I’d recommend coating the apples in the mixture to prevent browning. If you are coating your apples in caramel right away, then it isn’t all that necessary.) Dry apple rounds thoroughly on paper towels and place a toothpick, stick or wooden skewer into them.

Melt caramels either in the microwave or over a double boiler until completely smooth. Dip dried apples into caramel and tap off any excess. Roll in any desired toppings and eat!
